Delta Air Lines has unveiled a new era of its Delta One business class, previewing the refreshed offering at a media lunch at The Langham, Sydney, attended by Jeff Moomaw, the airline’s Vice President for Asia Pacific.

The updated premium experience will debut in Auckland on 24 October, followed by Brisbane on 26 October, and Sydney and Melbourne on 3 November, ahead of a wider global rollout in early 2027.

The overhaul spans dining, beverages, service rituals and sleep amenities, representing Delta’s largest investment in the Delta One experience in nearly 30 years. Drawing on two decades of customer insights, the airline is betting on elevated classics and greater personalisation.

“The number one bit of info that they gave back is that they don’t want whatever the new modern, flashy food experience is. It’s just too much. It was inconsistent. It’s almost like you’re trying too hard for something you’re not going to succeed in,” Moomaw told media today.

“What customers wanted most is the classics in an elevated format.”

The culinary revamp was developed with chef Simon Hulstone, drawing on his experience leading Michelin-starred restaurant The Elephant in the UK. Menu highlights include a Wagyu beef burger with caramelised onions, cheddar and cornichons on a toasted brioche bun, roasted sea bass with tomato tarragon sauce, braised lamb and a seasonally rotating risotto.

Lighter options include a chicken Caesar salad and chicken salad croissant, while Delta’s signature dessert cart remains, featuring an upgraded sundae. A dairy-free sorbet with an optional Champagne Taittinger float and a Napa Valley-inspired fruit and cheese plate will also be available.

Regional menus will feature dishes informed by chefs Norio Ueno and Jereme Leung, with Delta aiming to bring more local influence to its international services.

More choice, less waste

Delta has extended its entrée pre-selection window to 18 hours before departure, six hours closer to take-off than before. Passengers can choose lighter dishes or opt to skip morning meal service on long-haul flights in favour of coffee and a croissant before landing.

Moomaw said the change would benefit both passengers and the airline’s catering operations.

“The amount of food waste that we have reduced has been incredible just by knowing what customers need before they get on that flight and not having to overcater,” he said.

The beverage program has also been refreshed, with 13 wines from 11 wineries selected in partnership with Master Sommelier Andrea Robinson from a pool of 1,600 wines.

The finishing touches

The refreshed experience introduces a new “sip and settle” ritual, bringing a hot towel, warm nuts and a preferred beverage together at the start of the onboard journey.

A new Missoni amenity kit featuring Grown Alchemist skincare, a Marvis dental kit and a wrist strap designed for use beyond the flight will accompany an expanded sleep offering.

Passengers can expect an enhanced mattress pad, memory foam cuddle pillow, slippers and eye mask, alongside a second Missoni pillow on Delta One flights. Bombas comfort socks will also return on select services.

More than 200 Delta flight attendants and team members helped shape the experience over 14 months, contributing feedback across four testing phases and 36 dedicated trial flights.

Their input influenced everything from redesigned service rituals, including tea service and sauce presentation, to the development of more than 60 new pieces of tableware. The team also helped test the practicalities of serving the refreshed menu at cruising altitude, where details such as the preparation and temperature of a Wagyu burger bun required specific adjustments.

“It’s the flight attendants who know best, right? They do this day in and day out. They know what works, they know what doesn’t work,” Moomaw said.

Delta’s broader premium offering also includes new seat technology, with its next-generation Delta One suites set to debut on A350-1000 aircraft and extend to refreshed A330-200/300 fleets. The new suites feature lie-flat beds, 24-inch 4K QLED screens, wireless charging, USB-C connectivity and Bluetooth.

Expanding APAC connectivity

For Moomaw, the refreshed service is part of a wider push to connect the onboard experience with improved digital services and connectivity across the Pacific.

“It completely reinvents not only the service offering that happens in flight, but it’s complemented also with the new Wi-Fi that is just expanding out throughout the entire Pacific,” Moomaw told Travel Weekly.

“And it goes hand in hand with the digital ecosystem that we’ve got in place today. So all of these things together, whether it’s the food and beverage, the way that it is served in flight, your ability to choose either before or during flights and to customise your journey specifically for you – that’s what this does. It reinvents the Delta One experience for a customer of one.”

The Wi-Fi expansion follows another move to simplify trans-Pacific travel – Delta also introduced Seamless Baggage Transfer on Sydney–Los Angeles flights this week, allowing eligible connecting passengers to bypass baggage collection and rechecking when travelling onwards through the US.

The refreshed Delta One service will initially launch on transoceanic flights departing Los Angeles International Airport before expanding across Delta’s global network in early 2027.
