A restaurant, WADE by chef Wade Fordham, has opened at the new luxury Wineglass Bay Estate on Tasmania’s East Coast.

The restaurant sits on the shores of Moulting Lagoon at the gateway to Freycinet National Park. Its menu centres on Tasmanian produce, seasonality and cooking over fire, and is designed for sharing.

An open-fire asado grill anchors the kitchen. Dishes include Melshell oysters with green apple and shallot mignonette and finger lime, ember-baked scallops, Tasmanian wallaby skewers, wood-fired chicken and market fish, Cape Grim hanger steak and slow-roasted Tasmanian lamb shoulder.

Fordham grew up in Gippsland, where he fished and cooked outdoors with his grandfather. His Italian family heritage and time around the family butcher shop shaped his approach to produce. His career includes stints at Rockpool Melbourne and Saffire Freycinet.

“I’ve always loved cooking over fire. There’s something honest about it. You start with really good produce, you respect it, and you don’t need to overcomplicate things,” Fordham said.

“WADE is the food I want to cook and the way I want people to eat – together, sharing dishes, having a great bottle of wine and enjoying where they are.”

Master Sommelier Adrian Filiuta has curated the wine list, which has a Tasmanian foundation alongside selected Australian and international producers. It also features wines from the estate’s Kitty’s Mistake label.

WADE is open seven days a week, for lunch from 12pm to 3pm and dinner from 5.30pm to 9.30pm. Bookings are via OpenTable through the Wineglass Bay Estate website.

Wineglass Bay Estate is a 52-acre waterfront development that combines eight adults-only luxury retreats, the Kitty’s Mistake vineyard and cellar door, and the just opened WADE restaurant.

Located near Freycinet National Park, Wineglass Bay Estate will comprise a limited collection of architecturally designed retreats set along the water’s edge. Each retreat looks out across Moulting Lagoon.

The new luxury accommodation and vineyard experience opened in June, alongside its onsite vineyard, Kitty’s Mistake, named after a local landmark and long-held coastal story. The vineyard features Pinot Noir, selected for its suitability to the region’s soils, maritime climate and growing conditions.

“The intention was to create a stay that sits quietly within its environment, offering the comfort and considered detail of a five-star hotel, with the privacy and space more often associated with a private stay,” Wineglass Bay Estate owner Kim Alfeldi said.
