Its menu centres on Tasmanian produce, seasonality and cooking over fire, and is designed for sharing.<\/p>\n<p dir=\"ltr\">An open-fire asado grill anchors the kitchen. Dishes include Melshell oysters with green apple and shallot mignonette and finger lime, ember-baked scallops, Tasmanian wallaby skewers, wood-fired chicken and market fish, Cape Grim hanger steak and slow-roasted Tasmanian lamb shoulder.<\/p>\n<figure id=\"attachment_817177\" aria-describedby=\"caption-attachment-817177\" style=\"width: 310px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-817177 size-medium\" alt=\"'I've always loved cooking over fire. There\u2019s something honest about it,\u2019 says Wade Fordham.<\/figcaption><\/figure>\n<p dir=\"ltr\">Fordham grew up in Gippsland, where he fished and cooked outdoors with his grandfather. His Italian family heritage and time around the family butcher shop shaped his approach to produce. His career includes stints at Rockpool Melbourne and Saffire Freycinet.<\/p>\n<p dir=\"ltr\">\u201cI\u2019ve always loved cooking over fire. There\u2019s something honest about it. You start with really good produce, you respect it, and you don\u2019t need to overcomplicate things,\u201d Fordham said.<\/p>\n<p dir=\"ltr\">\u201cWADE is the food I want to cook and the way I want people to eat \u2013 together, sharing dishes, having a great bottle of wine and enjoying where they are.\u201d<\/p>\n<p dir=\"ltr\">Master Sommelier Adrian Filiuta has curated the wine list, which has a Tasmanian foundation alongside selected Australian and international producers. It also features wines from the estate\u2019s Kitty\u2019s Mistake label.<\/p>\n<p dir=\"ltr\">WADE is open seven days a week, for lunch from 12pm to 3pm and dinner from 5.30pm to 9.30pm. Each retreat looks out across Moulting Lagoon.<\/p>\n<p>The new luxury accommodation and vineyard experience opened in June, alongside its onsite vineyard, Kitty\u2019s Mistake, named after a local landmark and long-held coastal story.
