What happens when you bring a touch of New York glamour to the Australian bush? Businessman John Singleton is about to find out, with his luxury 20-suite retreat, The Grand Saddles Lodge, opening on the NSW Central Coast on 2 November.

Located in Mount White, just 45 minutes from Sydney, the new property combines old-world elegance, Art Deco-inspired interiors, fine dining and luxury wellness facilities across 28 acres of bushland.

The lodge is the latest addition to Singleton’s Saddles Mount White estate, which already includes the acclaimed Homestead restaurant and The Barn weddings and events venue.

Designed for stays of two nights or more, the retreat offers an all-inclusive-style experience, with breakfast, lunch, pre-dinner drinks and a five-course dinner with paired wines included in each stay.

Guests can also enjoy two signature experiences, ranging from cruises along the Hawkesbury aboard the lodge’s private boat, The Grace Kelly, to oyster farm visits, guided fishing trips and excursions to Glenworth Valley to watch the running of the horses.

“Saddles started because I wanted a decent coffee close to home. I never imagined where that would lead,” Singleton said.

“The Lodge is the next part of that story. The things I love most, from all over the world, gathered in the place I’ve always come back to.

“I’ve only ever had one rule: if it’s not the best in the world, you won’t find it here. Mount White has been home for more than 25 years. I hope people arrive for a weekend and find it hard to leave. I still do.”

A touch of Manhattan in Mount White

While the surrounding landscape is unmistakably Australian, the lodge’s interiors take inspiration from the glamour of grand country estates and a bygone era of sophisticated hospitality.

Designed by Michelle Leslie Studio and White + Dickson Architects, the property features rich timbers, leather furnishings, open fireplaces and private terraces, with a colour palette inspired by the surrounding bushland.

Perhaps the most New York-inspired feature is Ned’s, an intimate Art Deco-style cocktail and piano bar where guests can enjoy live music, pre-dinner drinks and late evenings.

The lodge’s 20 suites are spread across three categories: The Gardens, The Classics and four Signature Suites.

The Gardens offer secluded terraces and super king beds, while The Classics feature private heated circular plunge pools.

The four Signature Suites offer the most spacious accommodation, complete with freestanding baths, larger private heated plunge pools and generous terraces with sun lounges.

Throughout the property, guests will also find works from Singleton’s personal art collection, including pieces by renowned Australian artists Arthur Boyd, John Olsen and Sidney Nolan.

Guided tours of the collection are included among the experiences available to guests.

Fine dining takes centre stage

Food and wine are central to the experience, with the property’s signature restaurant, The Hawkesbury, headed by chef Phillip Roberts, whose career includes stints at ARIA and Oncore by Clare Smyth.

The restaurant will showcase local seafood, premium meats and poultry, alongside herbs and vegetables grown on the estate.

Guests can enjoy leisurely lunches with house beverages before returning for a five-course dinner with paired wines.

The Hawkesbury will also welcome non-resident diners on Friday evenings, Saturdays for lunch and dinner, and Sunday lunchtimes.
Wellness in the wilderness
For those looking to unwind, The Spa at The Grand Saddles Lodge features five treatment rooms and a hydrothermal suite complete with Finnish sauna, domed steam room and cold plunge.

Created in partnership with Synthesis Organics, treatments incorporate certified organic Australian skincare, native botanicals and aromatherapy.

Signature treatments include Sunrise, which combines dry body brushing, massage and a gemstone facial, and Sundown, a relaxing body polish and massage ritual.

Elsewhere, guests can make use of the infinity pool, fully equipped gym, gardens and walking trails.

The Grand Saddles Lodge opens on 2 November 2026, with bookings now available for stays of two nights or more.
